Cauliflower

Mashed Cauliflower
1 large head of cauliflower (sliced)
1/4 cup milk
1 tbl butter
1 tbl olive oil
1 tbl chives (minced)
1 clove garlic (minced)
1/2 tsp salt
1/8 tsp
pepper
Place cauliflower florets in a steamer basket over boiling water, cover and steam until very tender, 12 minutes. Heat olive oil in saute pan over medium heat, add garlic, stir frequently and removed from heat after 1 minute. Do not burn garlic. Add steamed cauliflower, garlic, milk, butter, salt and pepper to food processor. Blend until smooth and creamy. Add mixture to serving bowl and garnish with chives.
Nana's Cauliflower and Cheese
1 large head of cauliflower (sliced)
1 cup of milk
2 tbl flour
1 1/2 tbl butter
1/2 tsp salt
Dash of pepper sauce
Cauliflower: Place cauliflower florets in a steamer basket over boiling water, cover and steam until very tender, 12 minutes.
Cheese Sauce: Melt butter over low heat, and slowly add flour to make a roue. Stir roue until it gains a light carmel color. Slowly add milk, stir until smooth. Add cheddar cheese, stir until melted. Optional, add a dash a pepper sauce.
Roasted Cauliflower
1 head of cauliflower (sliced)
2 cloves garlic (minced)
Olive Oil
1/2 tsp salt
1/8 tsp
pepper
Preheat oven to 400°F. Place cauliflower florets in a single layer in an oven-proof baking dish. Toss in the garlic. Drizzle each piece with olive oil. Sprinkle with salt and pepper. Place casserole in the hot oven, uncovered, for 25-30 minutes, or until the top is lightly brown.
